Homemade Gravy

A make-ahead-friendly homemade gravy with sweet onions, herbs, and a splash of Cognac.

Ingredients
  

  • 1 stick unsalted butter
  • 1 1/2 cups yellow onions finely chopped (from 2 small onions)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups defatted turkey drippings plus chicken broth combined to make 2 1/2 cups
  • 1 tbsp Cognac or Brandy
  • 1 tbsp heavy cream
  • 1 tbsp fresh herbs chopped (thyme, sage, rosemary, or parsley)
  • Salt and pepper to taste

Method
 

  1. Melt the butter in a medium saucepan over medium-low heat. Add the onions and cook until very soft and translucent, about 15 minutes.
  2. Whisk in the flour and cook 2 to 3 minutes, stirring occasionally. Whisk in the turkey drippings/chicken broth and Cognac and cook, stirring occasionally, about 5 minutes until thickened. Stir in the cream and fresh herbs and season to taste with salt and pepper (about 1/2 teaspoon salt and 1/4 teaspoon pepper, depending on how salty your broth is). Transfer to a bowl or gravy boat and serve.
