- Melt the butter in a medium saucepan over medium-low heat. Add the onions and cook until very soft and translucent, about 15 minutes.
- Whisk in the flour and cook 2 to 3 minutes, stirring occasionally. Whisk in the turkey drippings/chicken broth and Cognac and cook, stirring occasionally, about 5 minutes until thickened. Stir in the cream and fresh herbs and season to taste with salt and pepper (about 1/2 teaspoon salt and 1/4 teaspoon pepper, depending on how salty your broth is). Transfer to a bowl or gravy boat and serve.
