Ingredients
  

  • 10 eggs
  • 1/2 cup flour
  • 1 tsp Lawry’s seasoned salt
  • 2 tsp baking powder
  • 2 pints small-curd cottage cheese
  • 1 1/2 lb Monterey Jack cheese shredded
  • 1/4 cup butter melted
  • 1 7 oz can diced green chilies

Method
 

  1. Using an electric mixer, beat the eggs for 10 minutes until light and frothy.
  2. Add the flour, baking powder, seasoned salt, cottage cheese, and melted butter. Blend well.
  3. Fold in the shredded cheese and diced chilies.
  4. Pour the mixture into a buttered 9×13-inch baking dish.
  5. Bake at 350°F for 35 minutes, until a knife inserted in the center comes out clean and the top is golden brown.
  6. Garnish with tomato slices and serve.
