Method
- Using an electric mixer, beat the eggs for 10 minutes until light and frothy.
- Add the flour, baking powder, seasoned salt, cottage cheese, and melted butter. Blend well.
- Fold in the shredded cheese and diced chilies.
- Pour the mixture into a buttered 9x13-inch baking dish.
- Bake at 350°F for 35 minutes, until a knife inserted in the center comes out clean and the top is golden brown.
- Garnish with tomato slices and serve.
