Sweet Potato Souffle

A holiday-favorite sweet potato souffle with a brown sugar, cornflake, and pecan topping.

Ingredients
  

  • 2 cups sweet potatoes
  • 1 yam
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup butter
  • 1 cup canned sweetened condensed milk
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
Topping
  • 3/4 cup crushed cornflakes
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup melted butter

Method
 

  1. Blend together the sweet potatoes, yam, sugar, eggs, butter, condensed milk, nutmeg, and cinnamon. Bake at 400°F for 30 minutes.
  2. Blend the topping ingredients together. Put the topping on and bake another 10 minutes.

Notes

The recipe needs to be doubled for a 9x13 pan.
